Had this come up with Team Nameless just recently:

Since 5e isn't exactly forthcoming about this, I'll use this set loosely based on PF/SF/DND 3.5
Time: Bonus action
DC: 10+Creature Challenge Rating(CR) rounded down.
Skill: see table
Additional: For every 5 above the DC, learn an extra category
Categories: Offense, Defense, Special Abilities, Resistances/Weakness/Immunity, Legendary actions (base DC is 15), Spells (Must be trained in Arcana)
Natural 20: Learn/recall the entire statblock, including legendary actions if you beat the DC for it.

Additionally, It might be worth your whiles to ask around about creatures and books of the locals. Taborlin, Commander Arran, and Yezar all might be a good sources to start with in the beginning. As we get farther along, there will be books and other means to learn about the area, its legends, and its inhabitants. Keep in mind, some knowledge might be dubious, and figuring that out might require insight checks against a variable DC

Somewhere in the world might be a copy of "Volo's Guide to Monsters" or "Xanathar's Guide to Everything" and other worldly books of esoteric knowledge. Books are important!
