How big could we get them if we made them wood rather than stone? Alternatively, we could make it stone and 20 ft tall instead of 10 ft, and forgo the barn until we actually have barn animals. As far as I know, we don't have any currently. Also, a barn could be wood instead of stone. Granary being stone makes sense, but a barn just needs to shelter the animals from cold and rain.

I was think the farms would have a paddock with a small barn for animals, not like modern barns, but then I grew up in Europe and there are millions of examples of medieval farms, so my thought might be different to yours.

A farm would include everything to operate it locally - I'm not certain that a centralized barn is entirely necessary, but also don't want to get in the way. 10'x10'x10' is just a relatively small cube. For a barn, I would be thinking closer to 60'x20'x10' at minimum, so 12 of those building blocks. For grain storage, I could see 10'x10'x20', so, two blocks.
