There are several spells which might help here, such as Charm, Circle of Darkness, Conjure Smoke, Conjure Missiles, Levitation, and Tricks. A successful Charm might be enough to end this encounter entirely, Circle of Darkness and Conjure Smoke to obscure our location from the hydra, Tricks could slow it down, or Levitation could allow one or more party members to take the fight to the beast.
